Chicken Fillets with Mustard Sauce and Thyme

Chicken Fillet with Mustard Sauce & ThymeFor 2 persons

Ingredients
2 chicken breasts
juice from half lemon
2-3 tbsp. mustard
olive oil
1 tbsp. fresh thyme
salt and freshly ground pepper
1/2 glass of water or chicken stock

Preparation

1. Cut each chicken breast into 3 smaller fillets. Season them with olive oil, salt and pepper. Heat well a non-stick pan, and add the seasoned fillets. Try not to overcrowd the pan. Cook until they get a nice red color on both sides (3 minutes for each side should be enough).

2. Return all the fillets in the pan, add the lemon juice, the mustard and the water (or stock). Boil over high heat to create the mustard sauce. 

3. When the mustard is well desolved in the water the the liquids are reduced to half, add the thyme. Remove the pan from the heat and let it sit for a few minutes, until all the ingredients bind together. Flip the fillets inside the sauce to dress them well. 

4. Serve with rice, vegetable puree, or fried potatoes.
