Pre made Pizza Bases

Let me make it a picture... You open the freezer, you take out a pre made pizza base, you add whatever you have in your fridge for a pizza, and you put it in the oven. That simple. So let's do it!


For 7-8 pizza bases


Ingredient
1300 gr. bread flour
800 gr. water
50 gr. olive oil
10 gr. fresh yeast
25 gr. salt
15 gr. sugar

Preparation
1. Put the liquids with the yeast and the sugar inside a bowl, and stir until the yeast desolves. In a second bowl combine the flour with the salt. Add the flour in the bowl with the liquids and knead well for 15-20 min. until you get a soft dough that doesn't stick on the fingers. If you use a mixer it takes less time (5-10 min.)  
2. Put the dough in a bowl with extra flour, cover the bowl with a damp towel, and put it in a warm place (up to 40° C) for 30 minutes, for the dough to rest and double its size.

3. Then cut the dough in 7 to 8 equal parts (300 gr. each), and form them into balls. Brush each ball with olive oil, put them on a sheet, and return them in a warm place (up to 40° C) for another 20 minutes.
4. Put flour on the bench, flour each ball of dough generously, and with a rolling pin open each ball into a 30 cm diameter pizza base. Cover baking sheets with a thin layer of flour, and place the opened doughs on them. Pierce all around the dough's surface with a fork.
5. Preheat the oven at 180° C and bake the pizza bases for up to 6 minutes (you don't want them to colour). Cool them very well and place them one on top of the other with not stick paper between them. Rap them with film and store them in the freezer.

How to use them...
Whenever you want to bake a pizza, take a frozen pizza base out of the freezer and add your favourite ingredients on it (don't defrost). Bake the pizza at 200° C, on the grid in the middle of the oven, for about 5-6 minutes.
