Fresh Anchovies Saganaki

Γαύρος Σαγανάκι
For 2 persons

Ingredients
1 kg fresh anchovies 
1/2 green chili pepper, cut in thin round slices
1/3 cup olive oil
the juice of 1 lemon
1 tbsp. mustard
1-2 big pinches dried oregano
salt & pepper

Preparation
Clean the anchovies from heads and guts, and wash them very well. Put them in a deep pan. Add all the ingredients, except the mustard, and slightly cover with water. Put the pan in high heat, and boil the fish for a few minutes untill cooked. Try not to stir the fish, because anchovies are very tender. 
Remove the anchovies from the pan using a skimmer, add mustard in the pan and continue boiling in high heat, until you get a thin sauce. 
Serve the fish in deep plates and cover with the sauce. 

Γαύρος Λεμονοριγανάτος (Αχνιστός)
Suggestions: 
1. If the oregano you used seems a lot, then add a little bit more! The result will be even tastier!..
2. Dip bread in the sauce.
3. Dip bread in the sauce.
4. For goodness sake, just dip bread in the sauce!
