Sardeles Ladolemono - Sardines with Lemon Sauce


A very simple and quick recipe for delicious sardines in the oven.
Σαρδέλες Λαδολέμονο στο Φούρνο

For 2 persons

Ingredients
1 k.g. sardines
extra virgin olive oil
oregano
lemon juice
coarse salt
freshly ground black pepper

For the ladolemono sauce
1 part lemon juice
3 parts extra virgin olive oil
1 pinch of salt
the liquids from the pan, after grilling the fishes

Preparation
Clean the sardines from the scales, the heads and the guts, and rinse them with plenty of fresh water. Drain well and dry them off with paper towel. Put the sardines in a bowl, add salt, pepper, oregano and olive oil and mix well. 
Put a layer of sardines in a pan with non stick baking paper, trying to keep them in rows, one next to the other. Add juice from 1 lemon, some more olive oil, and a pinch of coarse salt.
Preheat the oven at 360° F (180° C) and bake the sardines for 20-25 minutes.

For the ladolemono sauce
Whisk together all the ingredients. Add the sauce on the baked sardines.
